UMD celebrates Maryland Day with 50,000 cupcakes

Yep - 50,000. In honor of the holiday, University of Maryland bakery staff took two months to make the confections, which are being stored in various freezers all over the College Park campus.

UMD officials expect about 80,000 people to attend the event today, which is free to the public.

The numbers are unbelievable: the ingredients were $14,000, which were paid for in part by corporate sponsors, and the total calorie count for all 50,000 cakes is a staggering 12.6 million. Take that, Weight Watchers.

Fathers Day Cake Recipe

Ingredients for walnut cake recipe:
200 gm. chopped Wet dates
50 gm. Walnuts chopped
100 gm. Flour
100gm. Sugar
3 Eggs
1/2tsp. Vanilla essence
75 gm. Butter (preferably unsalted)
1/2 cup Warm Water
1/2 tsp. Baking Powder
1/2tsp. Soda Bi-carb

Method of date walnut cake:
Grease a round cake pan with butter and dust with flour.
Beat eggs properly.
Sift the flour and baking powder 3-4 times in a muslin cloth or very fine strainer.
Soak chopped dates with soda bi-carb in 1/2 cup warm water for 10 minutes.
Cream the butter and sugar till light and fluffy, add the beaten eggs and the flour mixture.
Now add chopped walnuts and soaked dates and mix thoroughly.
Pre-heat the oven.
Pour the prepared mixture in the greased pan and bake at 350 F for about 40 minutes.

Banana Cake Recipe

Ingredients of banana cake:
1 cup White Sugar
1/2 cup Butter, unsalted
2 Eggs
11/2 cup All Purpose Flour
1 tsp. Vanilla Extract
4tbsp Buttermilk
1tsp Baking Soda
3 Mashed Bananas
1 cup Chopped Nuts (walnut)
1 pinch Salt

Method of how to make banana cake:
Pre-heat oven at 350 degree Fahrenheit (175 degree Celsius).
Grease and flour the cake pan.
In small bowl mix together flour, baking soda and salt. Separate the egg and keep aside.
Cream butter and sugar. Add egg yolks and vanilla extract beating well.
Mix in the mashed bananas.
Add flour mixture alternately with the buttermilk to the creamed mixture. Mix only to combine, and not too much.
Stir in the nuts. Beat the egg whites until stiff. Fold the batter in the egg whites.
Pour the batter into the pans.
Bake at 350-degree Fahrenheit for 30 minutes or until test done.
Remove from oven and cool it.
Note: For testing use a toothpick. Pierce toothpicks into the cake if it comes out clean without sticking. It means cake is done
